Sales of seafood have progressed swimmingly in the restaurant industry, owing to fish, shrimp and other marine ingredients appear on most menus in the U.S., especially in the casual-dining segment. In its annual State of the Seafood Market research study, Nation’s Restaurant News found that the downstream potential for this popular cuisine is robust, as consumers look to new flavors in familiar dishes or interesting formats like sandwiches, tacos, and other handhelds.
