Calling Out Seafood’s Origins to Hook Restaurant Consumers

Fish and seafood’s consumer appeal already benefits from perceptions of health and freshness, and chef Kathy Casey said restaurants can double down on these cues by highlighting where they source their marine proteins. As they develop seafood dishes, culinary leaders should call out specific origins, like when salmon comes from Alaska, in their menu descriptions, as often as they tout their ingredients being wild or sustainable, she says.
